摘要: 银杏果俗称生白果。银杏在中国、日本、朝鲜等国家和地区均有大量分布。银杏的自然地理分布范围很广。银杏果含有多种营养元素,除淀粉、蛋白质、脂肪、糖类之外,还含有维生素c,核黄素、胡萝卜素、钙、磷、铁、钾、镁等微量元素,以及银杏酸、白果酚、五碳多糖、脂固醇等成分。具有益肺气、治咳喘、止带浊、缩小便、平皴皱、护血管、增加血流量等食疗作用和医用效果。本文研究了以白果为原料的面条制备工艺,制定了产品标准,并进行了生产车间设计,旨在为白果资源的深度开发利用提供参考。

Abstract: Ginkgo fruit commonly known as raw ginkgo. Ginkgo biloba is widely distributed in China, Japan, Korea and other countries and regions. Ginkgo biloba has a wide geographical distribution. Ginkgo fruit contains a variety of nutritional elements, in addition to starch, protein, fat, sugar, but also contains vitamin C, riboflavin, carotene, calcium, phosphorus, iron, potassium, magnesium and other trace elements, and ginkgo acid, ginkgo phenol, five carbon polysaccharide, lipid sterols and other components. It is beneficial to lung qi, cure cough and asthma, stop the turbidity of the belt, narrow the stool, smooth the chaing wrinkle, protect the blood vessel, increase the blood flow and other food therapy and medical effect. In this paper, the preparation technology of noodles with ginkgo fruit as raw material was studied, the product standard was established, and the production workshop was designed, in order to provide reference for the in-depth development and utilization of ginkgo fruit resources.

1.1引言:

随着全球社会经济的快速发展以及人们生活节奏的不断加快,速食面因其具有食用方便、价格低廉、易于保存等特点,经过50年的发展,已成为畅销量第一的方便食品。随着生活节奏加速和生活水平的提高,消费者不单单考虑食品的快捷性,更多方面开始关注食品的健康、营养、绿色等诸多因素,对食品的需求丰富多样,对于速食面厂商的挑战就是能够持续保持产品创新和产品升级的能力。而白果含有多种营养元素,除淀粉、蛋白质、脂肪、糖类之外,还含有维生素c,核黄素、胡萝卜素、钙、磷、铁、钾、镁等微量元素,以及银杏酸、白果酚、五碳多糖、脂固醇等成分。具有益肺气、治咳喘、止带浊、缩小便、平皴皱、护血管、增加血流量等食疗作用和医用效果,因此本文将探讨以白果为原料做成的速食面加工产品;希望其既能保持速食面原有的优点,同时使得速食面更具有营养价值。
