摘要:红枣是鼠李科枣属多年生落叶小乔木枣树的果实,原产于我国并有着悠久的培育历史,有极高的食用价值和药用价值,并且具有抑制癌细胞、防止心血管疾病、提高免疫功能、抗敏、护肝、美容等保健功效。红枣具有氨基酸、多糖、维生素、核苷酸,以及黄酮类、有机酸、皂苷类、生物碱、儿茶酚等多种物质成分。本论文综述了红枣的生理特性和保健功能、生产工艺设计、物料衡算、设备选型、劳动定员、水电气估算、管路设计、设计工厂车间布局图及管路图。做到优化红枣产品工艺、综合利用红枣原料加工生产,充分利用资源。

Abstract: Jujube is the fruit of the perennial deciduous dungarunga of the genus Rataceae, and it originated in China which has a long history of cultivation, with high edible value and medicinal value. Jujube has the functions such as restraining the cancer cell, treating cardiovascular disease, improving immune function, anti-sensitivity, liver protection, beauty. Jujube has amino acids, polysaccharides, vitamins, nucleotides, as well as flavonoids, organic acids, saponins, alkaloids, catechol and other substances. This article sums up the physiological property, healthcare functions, production process design, material balance, equipment selection, labor quota, water and electricity estimation, pipeline design, plant layout and pipeline diagram design of jujube to optimize the process of jujube products, comprehensive use of raw materials processing and production, make full use of resources.

1.1红枣的简介

红枣又名华枣、大枣、良枣,为鼠李科枣属多年生落叶小乔木枣树的成熟果实,经晾晒或烘烤干制而成,枣皮呈暗红至紫红色。红枣起源于我国,在我国有悠久的栽培历史,红枣的营养价值早在古代中国就有记载,既可以作为食物辅助粮食,又可以药用“润肺止咳补五脏、治虚损”,红枣的味道甘甜风味独特无毒,在且仅在我国有着栽培规模,并成立了相关的枣树栽培技术体系,保留了许多技术。
