摘要

青钱柳又名青钱李、山麻柳、甜茶树、摇钱树等,是我国特有的单种属植物,也是国家重点保护的濒危植物之一,并于2013年被收录在新资源食品目录。研究表明,该植物含有黄酮、多糖、皂普等成分,具有降血糖、血脂、血压,抗氧化、抗菌和防癌等多种功效,是一种较好药理活性的药用植物和新食品资源。本设计研究了以青钱柳叶为原料的茶饮料的制备工艺,制定了产品标准,并进行了生产车间设计,旨在为青钱柳资源的深度开发利用提供参考。

本文在实验室前期研究的基础上,综述了关于青钱柳的特点、茶饮料生产工艺、国内外研究概况,以及对该食品商业化现状与未来进行分析和展望,以期对后期青钱柳相关研究开发提供参考。

Abstract

Cyclocarya paliurus, also known as Cyclocarya paliurus, Salix psammophila, Camellia sinensis, etc., is a unique single genus plant in China, and is also one of the endangered plants under national key protection. It was included in the new resource food catalog in 2013. The results show that the plant contains flavonoids, polysaccharides, soaps and other components. It has many functions such as hypoglycemic, blood lipid, blood pressure, antioxidant, antibacterial and anti-cancer.it is a medicinal plant and new food resource with good pharmacological activity. This design studied the preparation technology of tea beverage with Cyclocarya paliurus leaves as raw materials, formulated product standards, and designed the production workshop, aiming to provide reference for the in-depth development and utilization of Cyclocarya paliurus resources.

Based on the previous research in the laboratory, this paper summarized the characteristics of Cyclocarya paliurus, the production technology of tea drinks, the research situation at home and abroad, and analyzed and prospected the commercialization status and future of the food, in order to provide reference for the later research and development of Cyclocarya paliurus.
